Neighborhood pizzeria builds on Chicago roots, adds entertainment and expanded seating
The newest outpost of Bricks Corner opened at 2508 S. 5600 West in West Valley City at the end of June, bringing a locally run alternative to the stretch of chain restaurants that has long defined parts of the city.
Owner and chef Josh Poticha, who described his upbringing as being in downtown Chicago and deeply shaped by that city’s food scene, designed the West Valley location from the ground up. The spot is larger than the restaurant’s first location in Salt Lake City and includes a private dining area, a full bar, a takeout entry separate from the dining room, and arcade cabinets such as Pac-Man and Galaga, plus pinball — an intentional nod to the casual pizza-and-games venues Poticha frequented in Chicago.

Poticha said he wanted to fill a need for an independent pizzeria in an area he felt was underserved by locally owned establishments. He opened the original Bricks Corner in 2020 in Sugar House at a renovated service station and later expanded with the West Valley City location, choosing that site after acquiring and building it up from a dirt lot.

For residents, the West Valley City Bricks Corner aims to combine food, affordable entertainment and convenient service. Key features announced and visible during early visits include:

Poticha’s background includes culinary school and work with notable kitchens before opening his first Bricks concept in South Carolina in 2008. His move to Utah was influenced by outdoor recreation opportunities, particularly skiing, and his affinity for Sugar House’s neighborhood feel when he first arrived. That first Bricks Corner opened in December 2020; the West Valley City site follows the same neighborhood-oriented model but on a larger footprint.
